I like to simply decorate my fruit cake with blanched almonds and glaze it with apricot jam, as my nanna used to do. However, you can top yours with a layer of marzipan and glacé fruit for the full festive affair if you like. It is worth noting that seeking out the best-quality dried fruit and chopping it yourself (rather than buying a packaged mix) makes a huge difference â you will be repaid with a deep, rich, fruity flavour and a gloriously moist cake.
